Tori and Ben Stanley farm their herd of Longhorn cattle and flocks of Jacob, Portland and Texel sheep to the highest possible welfare standard and care. With passion, provenance and pride they are dedicated to producing the best beef and lamb they possibly can, on high quality grass fields.
All their animals get first class treatment from birth, through rearing, slaughter and butchery. The livestock roam majestically across the old grass meadows of their Melbourne Estate in Derbyshire.
Longhorn is the oldest English beef breed and renowned for their docile, carefree attitude. This comes through in the tenderness of the beef produced. The Longhorns are a native, slow maturing breed and therefore they are best fed on grass over a longer period of time. This allows them to mature slowly, giving the beef fantastic marbling and flavour. Their docility means they are more relaxed animals, which in turn means their muscles are relaxed, ensuring all the beef is exquisitely tender.
They always dry hang the beef for 4 weeks to develop flavour and begin the natural tenderising process. The natural enzymes in the beef breaks down the tissues in the meat, this encourages water to evaporate which concentrates the flavour. Properly hung meat may not look as pretty as freshly slaughtered meat, but it has a lot more flavour and is more succulent because the aging process allows.
Tori and Ben have been farming sheep for over 10 years now. They started with a small flock of Jacobs and have successfully entered them into several prestigious shows such as the Great Yorkshire Show Championships, the Royal Show Championships and the Interbreed Championships.
The meat from Jacobs, Portland and Texel Sheep is known for it's lean, delicious and full flavour. The sheep lead happy, healthy lives out in the field all year round grazing on fresh grass. The meat is always hung for 2 weeks giving it a juicy, tender and succulent taste.
