Maryan uses the “Panca” chilli, a traditional spice used in Peruvian cooking as a base for her sauces. Exhibiting flavour profiles of smoky, sweet and spice these marinades give the adventurous chef a multitude of options when cooking. Encouraged to develop these sauces by friends and family Taste Peru was created. The enchanting flavours of Peru will surprise.
Maryan Carrillo a native of Peru moved to the North of England a few years ago with a wealth of Peruvian cooking knowledge handed down from family generations. Her mother and grandmother - both superb cooks - where key in sharing their knowledge and passion for wonderful flavours and their delicious recipes.
Experimenting in her own kitchen, Maryan used authentic Peruvian chillies to create hot dipping sauces and marinades for family and friends. Encouraged by their positive feedback Maryan took the decision to create Taste Peru and to bring her sauces to the people of South Yorkshire. Using local farmers markets and food fayres Taste Peru started.
One of the main ingredients in Peruvian cooking is chilli, a particular chilli called “Panca” an ancient name given to it by the Incas, and it has a unique smoky, sweet and spicy taste. This particular chilli forms the bedrock for the rich and flavoursome food of Peru. Taste Peru marinades are incredibly flexible, versatile and provide the cook with so many options. These wonderful fragrant fruity sauces can be added to rice, stir-fry’s, marinades for vegetables, or meat and fish. Finally, accompany with a full bodied red wine!
